Preparation time approx. 20 minutes
4 chicken breast fillets
1 tbsp. oil
For the Salsa
1 small red pepper
2 spring onions
1 piece ginger (size of a walnut)
75g Terrafertil Goldenberries (dried physalis)
1 tbsp. white balsamic glaze
2 tbsp. walnut oil
4-6 stems coriander
1. Wash the chicken breast and pat dry. Season with salt and pepper and roast the chicken in a pan for about 15 minutes. Turn over the breasts from time to time. Let the chicken rest for a while after it is done.
2. Quarter the pepper, remove the seeds and wash. Wash the spring onions, peel the ginger and cut it all into little pieces. Mix with the goldenberries, the white balsamic glaze and the walnut oil. Add the chopped coriander and season with salt and pepper.
3. Cut the chicken breasts into slices and serve with salsa.
