Preparation time approx. 30 minutes (without soaking and cooling time)
Ingredients for 360ml:
100g Terrafertil Goldenberries (dried physalis)
1/2 vanilla pod
15g fresh ginger
3 tbsp. fresh lime juice
200g gelling sugar
1. Quarter the goldenberries and soak in water overnight.
2. Scrape out the pulp of the vanilla bean. Peel the ginger and cut it in to slices. Purée the goldenberries and mix them with the vanilla pod, the vanilla pulp, the ginger, the lime juice and the gelling sugar in a pot and let it soak for 15 minutes.
3. Put the mixture on to the heat and boil for 3-4 minutes while stirring constantly. Then remove the vanilla bean and ginger.
4. You may have to remove some foam from the goldenberry jam. Pour the hot jam into clean twist-off-glass jars, close the jars and put them upside down for 5 minutes. Turn them right side up and let the jam cool.
